Southwest Casserole w/Rice

I'm a huge fan of Chipotle's burrito bowls.  But, not of the calories. So, I was happy to find this recipe, as it is an easy and healthier alternative.

It's simple and easy to make and uses some pretty basic ingredients that I tend to always have on hand.

Ingredients:

2 T. taco seasoning
1 lb. boneless skinless chicken breast, cut into bite-size pieces
2 Tbsp. Kraft Light Zesty Italian Dressing
1 (15-oz) can black beans, rinsed
1/2 cup frozen corn
1 green pepper, chopped
1 cup salsa
½ cup shredded cheese (I used a Mexican four-cheese blend)
Rice (I used brown rice)
Sour cream (optional)
Cilantro (optional)

Directions:

Preheat oven to 375ºF. Add taco seasoning to chicken in medium bowl; toss to coat.

In a large skillet, heat Italian dressing over medium-high heat. Add chicken; cook and stir 5 min. or until evenly browned. Spoon into 2-qt. casserole dish coated with cooking spray; layer beans, corn, green peppers and salsa over the chicken.

Cover with foild and bake 20 minutes. While casserole is baking, prepare rice according to package directions.

After initial 20 minutes of baking, remove foil and top the casserole with the cheese; bake 5 additional minutes or until cheese is melted. Serve over rice and with sour cream and cilantro, if using.
