Baked Southwest Rollups

Adapted from Mel's Kitchen Cafe

These are so incredibly good.  It's helpful to have a handy helper (husband, perhaps?) to make the stuffing and rolling go a bit quicker.  But, even if you don't, these are worth every bit of time it takes to make them.

They are baked, not fried, so they are healthy too!  These are crispy and full of flavor!  And the creamy spicy dipping sauce compliments these well.  Serve them as an appetizer at a party, or make them as your meal like we did!

Ingredients:

Rollups
1 tablespoon olive oil
1 medium onion, diced

2 cloves garlic, finely minced

2-3 boneless, skinless chicken breasts, cubed*
1 green pepper, diced small

4 oz. diced green chile peppers
1 can black beans, rinsed and drained

10 ounces frozen, chopped spinach, defrosted and drained
1 cup frozen corn

1 teaspoon cumin

1 teaspoon chili powder

1/4 cup freshly chopped cilantro
(I omitted)
1/2 teaspoon salt

1/2 teaspoon pepper

2 cups shredded Monterey Jack cheese
3 dozen fajita-size (small) flour tortillas

Spicy Dipping Sauce
1/2 cup sour cream

1/2 cup Greek yogurt**
1/4 cup salsa

Cayenne pepper, to taste

Directions:

Preheat the oven to 400 degrees. Cover two baking sheets with foil and lightly spray with cooking spray. Set aside.

In a small bowl, combine the dipping sauce ingredients. Mix well. Refrigerate until ready to serve.

Add the oil to a large nonstick skillet and heat over medium heat. Add the onion and cook 3-4 minutes until softened. Add the garlic and cook 30 seconds, stirring constantly.

Add the chicken and peppers and cook, stirring occasionally, until the chicken is cooked through, about 5 minutes. Add the black beans, spinach, corn, seasonings and cilantro.

Stir and cook until the mixture is heated through. Add the cheese and stir until the mixture is hot and cheese is mostly melted.

Warm the tortillas by placing a few at a time between damp paper towels and microwave 30-45 seconds. Spoon some of the filling onto the center of each tortilla (don’t overfill) and roll up tightly by folding in two edges and then rolling. Place seam side down on the baking sheets.

Lightly spray the tops of the rollups with cooking spray. Bake at 400 degrees for 15 minutes, until the rolls are lightly browned and heated through. Serve immediately with dipping sauce.

Yields: 3 dozen rollups

*As a time saver, you could substitute the breast meat of a cooked rotisserie chicken and just add it to your skillet when you add the beans and spinach.

**If you don't have Greek yogurt, use sour cream.
