Bunny Bark

Easter is early this year and I have a busy week leading up to it, between work and appointments (including a very important shopping date with my mom).  I also have two family celebrations this year to attend, one on Easter Sunday, and one the Saturday before.  So I wanted to find something to bring that I could make in advance.  

I already planned to make cupcakes the Saturday before Easter and didn't want to be rushing around trying to get multiple homemade items and myself ready that day.  So this Bunny Bark sounded perfect.  I made it yesterday and have it packed up and ready to go for our celebration on Saturday.  It was incredibly easy and quick to make.  Plus festive too!  Of course you can easily adapt this to any holiday- just change up the color of the candy.  You can use regular chocolate in place of the white chocolate, but the white chocolate just makes it perfect for Easter and spring.  

Ingredients

14 whole vanilla sandwich cookies (Oreos, Who Nus, etc), chopped into pieces
1 1/2 cups pretzels, broken into pieces 
1 lb. white chocolate 
1 cup spring-time M&Ms, divided
Sprinkles


Directions

Cover a large cookie sheet with wax paper. Mix the cookies, pretzels and 3/4 cup of the M&Ms together and place on the prepared cookie sheet.

Place white chocolate in a glass container or large glass measuring cup and microwave for 1 1/2 minutes. Stir; microwave for another 30 seconds and stir, repeating until the chocolate is melted and smooth. Be careful not to burn.

Gently pour the melted chocolate over the cookie mixture; spread with a spatula if needed to coat the pieces evenly.

Sprinkle remaining M&Ms and some colored sprinkles over the chocolate before it starts to harden.  

Place the cookie sheet into the refrigerator until the chocolate is set. Remove and gently break or cut the bark into small pieces.

Store in an airtight container.

  1. This looks adorable! I bet you could add other Easter candy too like peeps or reese eggs. So fun and festive!
