White Pizza with Spinach, Artichokes & Tomatoes

Our favorite local pizza joint has a wonderful pizza named The Bianca, which is appropriate considering it is a white pizza.  I love white pizzas.  Sometimes, I'm just not in the mood for tomato sauce.  This pizza is a nice alternative to the traditional tomato-sauced pizza.  This is my take on The Bianca.

Ingredients:

Your favorite pizza dough or pre-made crust
1/2 cup Alfredo sauce (I used light)
4-6 oz. artichoke hearts, quartered and rinsed
2 oz. fresh spinach, chopped
1 small tomato, chopped
3/4 cup mozzarella cheese, shredded

Directions:

Follow the directions for using your favorite dough or crust.  (I often use a pre-made crust and just have to top it and heat the toppings, but this time I happened to use a dough.  For my dough, I rolled it over a pizza pan, topped it with the toppings and baked it for 15 minutes at 450 degrees. Your time and oven temp will vary depending on your crust or dough.)

Then top the dough or crust with the Alfredo sauce, followed by the spinach and cheese.  Then add the artichokes and tomatoes.  Bake until toppings are heated through and cheese is melted (and if using dough, until the dough is light golden brown).
Yields: 6 slices
