Brie en Croute

Ever since my friend Lauren posted a baked Brie recipe, and professed her love of baked Brie, I knew that I had to try it!  So one day while grocery shopping, I saw phyllo dough on sale and bought some, baked brie in mind.  Of course I didn't realize at the time that baked Brie usually is made with puff pastry, not phyllo dough.  I brought it home, stuck it in the fridge, and forgot about it.

So then, Lauren posted another baked Brie recipe, and I remembered that I really wanted to make it myself.  So the next time I went grocery shopping, I picked up a wheel of Brie and was very excited to try it out.  

Having never worked with phyllo dough before, I didn't know what fun I was in for.  I easily wasted 4-5 sheets between ripping them trying to get them out of the packaging and not working quickly enough and letting them dry out.  Thankfully my husband was nearby to help prevent me from having a complete nervous breakdown!

It was only after we ate the Brie did I look again at Lauren's recipe and realized it called for puff pastry.  Luckily my baked brie still turned out deliciously, and my husband and I really had a good laugh at my expense once I realized the mistake I made and the frustrations that came because of that mistake!

So, I learned that it is possible to make Brie en croute with phyllo dough.  If you want the classic version, use puff pastry and refer to Lauren's blog for the directions on that.  Oh, and in case you were wondering...  Brie en croute simply means "Brie in crust".

Ingredients:

8 oz. Brie wheel
2 sheets phyllo dough, thawed
1/2 cup dried cranberries
1/4 cup chopped pecans
1/4 cup honey
1 egg
1 T. water
Cooking spray
Assorted crackers, French bread, apples

Directions:

Preheat oven to 400 degrees.  Place cranberries in small microwave-safe bowl.  Cover with water and microwave on high for 45 seconds.  Let stand 3-5 minutes, then drain well.  Add pecans and honey to the cranberries and stir until combined.  In a small bowl, whisk egg and water together to form egg wash;  set aside.

Lay one sheet of phyllo dough on a flat surface.  Spray with cooking spray.  Place second sheet of phyllo dough on top of the first sheet; place cranberry mixture in the middle of the phyllo dough, then place brie on top.  Working quickly, wrap phyllo dough around brie.  Brush egg wash over seams of phyllo. Place on a baking sheet sprayed with cooking spray.  Brush the egg wash over the rest of the phyllo.

Bake for 20 minutes or until golden brown.  Let set 15 minutes. Serve with crackers, bread, and apples.
