Oh, what delicious cupcakes! These are so moist and flavorful. And get this- they are low-fat!! What could be better?! Well, let me tell you- they are incredibly simple too!
These are the perfect spring cupcake!
Ingredients:
For the cupcakes:
1 box yellow cake mix
20-oz can of crushed pineapple in juice
For the frosting:
8-oz cream cheese, softened (I used light)
1/4 cup sugar
20-oz can of crushed pineapple, drained well
Directions:
Preheat oven to 350 degrees. In a large bowl, combine cake mix and pineapple. Mix on medium until combined. Line muffin tins with paper liners; fill each liner 2/3- to 3/4-full. Bake according to cake mix box instructions.
While cupcakes are baking, combine cream cheese, sugar and pineapple in medium bowl. Mix until thoroughly combined. Allow cupcakes to cool completely before frosting.
