Honey Garlic Meatballs Made Two Ways

These meatballs can be made two ways: in the skillet or in the slowcooker.  Also, frozen fully-cooked meatballs can be used in place of making them from scratch, if desired.  It's nice to have options, isn't it?

These were very tasty little meatballs.  And with very few ingredients, they made for a quick and easy meal.  Perfect for a weeknight meal after a long day's work.

 
Ingredients:

1 pound ground beef
1/2 cup dry bread crumbs
1 egg
1/2 teaspoon salt
1/2 tablespoon butter
3 garlic cloves, minced
3/8 cup ketchup
1/4 cup honey
1/8 cup soy sauce
Cooked rice

Directions:

Skillet method:

Combine ground beef, bread crumbs, egg and salt; mix well. Shape into 24 meatballs, about 1-1/2 in. diameter.  Place meatballs on a greased rack in a shallow baking pan. Bake at 500° for 12-15 minutes, turning often; drain. Or, skip this step (and omit these ingredients) if using frozen meatballs and heat them according to package directions.

Melt the butter in a large skillet; saute garlic until tender. Combine ketchup, honey and soy sauce; add to skillet. Bring to a boil. Reduce heat and simmer, covered, about 5 minutes.

Add meatballs. Simmer, uncovered, until the sauce thickens and the meatballs are lightly glazed. Serve over rice. 

Slowcooker Method:

If making meatballs from scratch, follow directions from skillet method.  If using frozen meatballs, there is no reason to heat them first with this method.

Place slowcooker on high setting.  Melt butter in the slowcooker, then add the garlic, ketchup, honey and soy sauce.  Stir with spatula to combine.  Add meatballs.

Cover and heat on high for 1-2 hours.  Serve over rice.

Yield: 5-6 servings.
