Thai Peanut Chicken Pizza

My favorite pizza from California Pizza Kitchen is the Thai Peanut Chicken Pizza.  So this recipe is my attempt at recreating that pizza.

The CPK pizza has bean sprouts on it, but since I didn't want to buy a whole bag and have nothing to do with the leftovers, I didn't use them.  But of course, you can add them for a more authentic version. 

The flavor of this pizza was spot-on.  The texture of my peanut sauce was a little off, though.  So I'd recommend finding a way to thin the sauce, or just using store-bought sauce. 

Ingredients:

1 whole wheat pre-made pizza crust (or your favorite crust)
1 chicken breast, cooked and chopped
3/4 cup shredded mozzarella cheese
1/4 cup matchstick carrots
1/4 cup peanuts

Directions:

Preheat oven to 400 degrees.  Place crust on pizza pan.  Spread a thin layer of peanut sauce over the crust, amount to your liking.  In a small bowl, combine the chicken with a small amount of peanut sauce, enough to just cover all of the pieces.

Sprinkle the cheese over the pizza and bake for 10 minutes or until heated through and the cheese is melted.  Remove from the oven, sprinkle with the carrots and peanuts.  Enjoy!
Yields: 4-6 servings
