Adapted slightly from Rachel Ray/Food Network
I found this sauce recipe and adapted it slightly. I used natural peanut butter, perhaps the reason I needed to add a little sugar? The flavor was perfect, with a nice but not too strong undertone of heat from the cayenne. But the texture was too paste-like for me.
I did accidentally use olive oil instead of vegetable oil, so that may have affected my result. The sauce is spreadable but you can't drizzle it, because it's too thick. Perhaps it needs more oil? Or hot water mixed in? I'm not sure. If anyone figures out a better consistency, be sure to let me know! Because the flavor was great.
Ingredients:
½ cup peanut butter
4 tablespoons soy sauce (I used light)
2 tablespoons rice vinegar
¼ teaspoon minced garlic (I used jarred w/the garlic juice)
½ teaspoon cayenne pepper
¼ teaspoon sugar (optional)
¼ teaspoon sugar (optional)
4 tablespoons vegetable oil
Directions:
In a medium bowl, whisk peanut butter, soy sauce, vinegar, garlic and cayenne together. Taste and add the sugar if necessary. Stream in vegetable oil; whisk contents of bowl until thoroughly combined and smooth.
Yields: one batch
