Impossibly Easy Taco Pie

This dish was very simple to make, and tasted great!  It was actually better than I anticipated.  I thought it would be weird having taco-seasoned meat in an egg pie, but it really wasn't an egg pie.  The egg mixture just helped hold the ingredients together, but did not end up cooking into the consistency of eggs.  I was pleasantly surprised.

If you aren't a fan of store bought taco seasoning mix, I came across this recipe for a homemade version (though I haven't tried it myself yet).

Ingredients:

1 pound lean ground beef
1 medium onion, chopped
1 pkg. taco seasoning mix (I used 40% Less Sodium)
1 (4.5 oz) can chopped green chiles, drained
1 cup milk
2 eggs
½ cup Bisquick mix
¾ cup shredded cheddar cheese
¼ cup salsa (I used fresh pico de gallo)
Sour cream (optional)

Directions:

Heat oven to 400°F. Grease 9-inch pie plate (I used cooking spray). Cook ground beef and onion in 10-inch skillet over medium heat, stirring occasionally, until beef is brown; drain. Stir in seasoning mix (dry).

Spoon mixture into pie plate; top with chiles.  Whisk together milk, eggs and Bisquick mix until blended. Pour over meat mixture.

Bake about 25 minutes or until knife inserted in center comes out clean. Spread salsa over top. Sprinkle with cheese. Bake 5-10 minutes longer, until cheese is melted. Cool 5 minutes. Serve with sour cream, if desired.

Yields: 4-6 servings
