Chicken Salad

From my mother =)
This is an easy dish to make.  My mom started making her chicken salad this way years ago after we had it this way at Bob Evans.  It's great alone or with crackers.  Chopped pecans sprinkled on top make a nice addition.

Ingredients

4 cups cooked cubed chicken breast
1 cup red seedless grapes
¼ to ½ cup diced celery (amount depends on your liking)
Approx. 1 cup light mayo or Miracle Whip
      (again, amount depends on your liking)

Directions

Combine all ingredients in a large bowl.  Refrigerate several hours or overnight if possible, to allow flavors to blend well.

Yields: 2-4 servings.

  1. This is also great with a chopped red and green apple added in (of course adjusting the amounts of mayo and chicken would be necessary).
