Peanut Brittle

I made this recipe for my brother for his birthday.  This was before I decided to start this blog, so I do not have a picture.  However, I now have a picture of the note he left me about what he and his neighbor kid friend thought of the peanut brittle:

I give you: The Best Ever Tasted Peanut Brittle  =)

Ingredients

1 c. sugar
1/2 c. light corn syrup
1 c. unsalted peanuts
1/2 tsp. vanilla
1 1/2 tsp. butter
1 tsp. baking soda

Directions

Spray a cookie sheet with nonstick cooking spray.  Combine sugar and corn syrup in a 4-cup capacity or larger glass bowl.

Microwave on high power 3 1/2 minutes. Stir in nuts and microwave on high 2 1/2 minutes.

Add vanilla and butter and return to microwave on high 1 1/2 minutes. Quickly stir in baking soda and mix well.

Turn out onto cookie sheet. Quickly spread to desired thickness. Let cool and crack into pieces.

Yields: one batch    

Note:  I highly recommend using a silicone heat-resistant spatula for this recipe, as I melted my rubber spatula the first time I made it!
