I made this recipe before I decided to start this blog. So, alas, I have no picture of the final result. But, it was good. Take my word for it!
Ingredients
12 wedges light Laughing Cow Swiss Cheese
2 cup skim milk
4 tbsp Parmesan cheese
4 tbsp reduced calorie margarine
1 tsp garlic powder
Pepper, to taste
1 pkg. frozen spinach, defrosted and drained
12 oz. whole wheat pasta, cooked
Directions
In medium saucepan, combine cheeses, milk, margarine, garlic powder, and pepper.
Simmer on low until melted and heated throughout – about 15-20 minutes, stirring frequently.
Add the spinach and simmer 3-4 minutes, stirring frequently. Serve over whole wheat pasta.
