Lately I have been trying to incorporate more healthy meals into our diet, which has led to the discovery that both my husband and I love quinoa. We have had it several times for dinner but never breakfast. So when I found this recipe, I was intrigued.
It is basically a jazzed-up oatmeal with an added punch of protein from the quinoa. It is SO good! I swear it just kept tasting better and better with each bite. It is sweet but not too sweet, and with only 1 teaspoon of brown sugar in each serving, it's actually pretty healthy too! I highly recommend trying this recipe- I think it may just become a weekend staple in our house. And it is not that it is too time-consuming or difficult to make before work during the week, it's just that I am too lazy in the mornings before work to do anything more than toss something in the toaster!
Ingredients
½ cup water
½ cup skim milk
3 tablespoons quinoa
1 small banana, sliced (more if desired for garnish)
3 tablespoons rolled oats
1 pinch salt
¼ teaspoon ground cinnamon
2 tablespoons chopped walnuts
2 teaspoons brown sugar
½ teaspoon vanilla extract
Directions
Combine the water, milk, and quinoa in a medium saucepan; stir to combine. Bring to a gentle boil. Reduce heat to low; simmer 5-7 minutes, or until the quinoa begins to soften.
Stir in the banana, oats, salt, and cinnamon. Cook, stirring frequently over low heat 2-5 minutes or until the mixture thickens. Remove from heat; stir in the brown sugar and vanilla. Tops with walnuts and extra sliced banana (if desired).
