BBQ Chicken Stuffed Baked Potatoes

Sometimes you just want a quick and easy dinner. This recipe is not only quick and easy, but it's also hearty, filling and delicious! It's a perfect way to use up leftover chicken- just reheat it while the potatoes bake. If you don't have leftovers, just make some- it's super easy. I cook my chicken with a little water or chicken broth in the slow cooker for 3-4 hours on high until it is cooked through, discard the water, shred it and add BBQ sauce.  I usually make at least 3 chicken breasts, because I like to get two meals out of it (this one, and usually a BBQ chicken pizza or BBQ chicken quesadillas).

Once I add the BBQ sauce and it is heating up in the slowcooker (takes 20-30 minutes or so), I make the potatoes in the microwave. If you bake them in the oven, you would obviously want to start them sooner or just keep the chicken warm in the slowcooker while they bake. 

I found that I prefer to butter my potatoes before adding the chicken and toppings. Otherwise, they are too dry for my taste. I haven't tried it but I'm sure these would be great with BBQ pulled pork instead of chicken, or even leftover sloppy joes!

Ingredients
2 russet potatoes, baked
1 cup shredded BBQ chicken, warmed
Toppings as desired: butter, salt, pepper, shredded cheese, sour cream, green onions, etc.


Directions
Slice each potato lengthwise. Top with butter, salt and pepper, chicken, cheese, sour cream and green onions. 


Yields: 2 servings
