One of my favorite foods is pizza. Calzones are a close second. I just love the cheesy, doughy goodness. This calzone is no exception. And it is quite simple to make. The filling can be made ahead of time and kept in the refrigerator, if you are short on time.
If you prefer, you can use a pound of your favorite pizza dough instead of the canned pizza crust. You could also substitute your favorite vegetables in place of the broccoli. Spinach would work well.

Ingredients
1 can refrigerated pizza crust
1 cup reduced fat ricotta cheese
1 10-oz box frozen chopped broccoli, defrosted and drained
8-oz shredded part-skim mozzarella cheese
Salt & pepper, to taste
Garlic powder, to taste (optional)
2 T. grated Parmesan cheese
Tomato sauce, for serving (optional)
Directions
In a medium bowl, combine the ricotta, broccoli and mozzarella. Season with salt, pepper and garlic powder, to taste.
Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Spread dough evenly onto parchment paper. Place cheese and broccoli mixture onto one half of the dough, leaving a 1-inch border around the edges. Fold over the empty half of the dough onto the filling. Pinch sides together to seal. Cut a few small slits in the top of the dough so steam can escape.
Top with grated Parmesan. Bake 15-25 minutes, until golden brown. Let stand 5 minutes before serving. Serve with tomato sauce, if desired.
