Watermelon Yogurt Pops

I wasn't planning on posting this recipe yet, but when I learned that August 3rd is National Watermelon Day, it seemed pretty appropriate for me to go ahead and post this.


I recently saw this recipe on a blog I follow and thought, wow- that sounds so easy!  I picked up some popsicle molds and then forgot about making these.  

But then one day while I was organizing my saved recipes in my Google reader, I saw this recipe again, and realized I had some leftover watermelon in the fridge.  Turns out I had exactly 1 1/2 cups of watermelon- these were obviously meant to be!

These were incredibly simple to make.  With the 90+ degree days we've been having lately, these were a perfect frozen treat!  Creamy and not too sweet- they are pretty much guilt-free.

Ingredients:

1 ½ cups seedless watermelon, diced
¾ cup fat-free plain Greek yogurt
1 t. honey, or more to taste

Directions:

Combine all ingredients in a blender.  Blend until smooth.  Pour into popsicle molds.  Place sticks into molds.  Freeze at least 8 hours or until set.  

For ease of removal from the molds, remove from freezer 10 minutes before serving, or place in warm water to loosen the pops.

Yield: depends on the size of your popsicle molds.  Makes ~2 cups of liquid.
