Strawberry Sauce

May is National Strawberry Month.  So it's entirely fitting that I post a strawberry recipe! This is an easy sauce that is slightly sweet, slightly tangy.  It works well over pancakes, waffles, and ice cream!

I just happened to have a 3-lb bag of frozen strawberries from my local wholesale club, so I used frozen strawberries when I made this.  You may need to adjust the amount of sugar you use, depending on how sweet your berries are, and how much lemon juice you use.

Ingredients

1 1/2 lbs. strawberries, hulled and sliced
1/4 cup sugar
1 t. cornstarch
Juice from half a small lemon
Pinch of salt

Directions:

Combine ingredients in medium saucepan over medium-low heat; stir gently until sugar dissolves and berries are soft, about 10 minutes (longer if using frozen berries).

Serve warm or let cool.
