Slowcooker BBQ Pulled Pork

I really enjoy pulled pork sandwiches.  But I've never made them myself before.  It could be because I have a terrible track record making pork (tendorloin, that is). 

I've attempted too many times to make pork tenderloin, following the directions for 20 minutes per pound, only to have all my side dishes ready and my pork still raw in the middle.  So I had to settle for having it at my mom's house when she made it.

But then I came across a slowcooker recipe and figured, how could I screw that up?  I'm pretty sure it's impossible to screw up this recipe!

This was so simple, and so good!  Moist and flavorful- the onion just practically melted into the pork.  Very tender.  It was even better the next day- I made pork tacos with the leftovers. And better yet- I am no longer traumatized by the thought of cooking pork!

Ingredients:

2 pounds boneless pork shoulder
1 onion, sliced
12-oz. soda (I used diet Pepsi- anything would work)
12-18 oz. BBQ sauce

Directions:

Place slowcooker on low setting.  Place half of the onion slices in the bottom of the slowcooker.  Place pork should on top of the onion slices, and top with remaining onions.  Pour soda over top.

Cook on low 6-8 hours.  Remove pork and onions; discard liquid.  Shred pork and return pork and onions to the slowcooker.  Add your desired amount of BBQ sauce.  Continue cooking on low for an additional 1-2 hours. 

Yields: 4-6 servings
