This is an easy dish to throw together when you are short on time. It's quick, cheap, easy, and has a few simple ingredients. Great for a working wife short on time (like me!) or anyone looking to put together dinner quickly. It tastes great, too.
In case you are looking at my picture wondering... yes, I omitted the mushrooms this time (if you have read this blog before, you already know of my husband's disdain for mushrooms).
Ingredients:
1 pound ground beef
1 medium onion, chopped
1/4 tsp pepper
1 can (4-ounces) mushroom stems and pieces, drained

1 can condensed cream of mushroom soup
1 cup sour cream (I used half light sour cream and
half Greek yogurt)
2 cups hot cooked noodles

Directions:
In large skillet, cook ground beef and onion until onion is tender and meat is no longer pink. Add pepper, mushrooms and soup; cook 5 minutes, stirring occasionally. Remove from heat.
Stir in sour cream; return to heat and heat through. Serve over noodles.
Yields: 4 servings
