Easy Ham, Egg & Cheese Pie


When I made this recipe, all I did was add onion to and substitute ham for green pepper from my Impossibly Easy Cheesy Pie recipe adapted from Betty Crocker. 

For some reason, this pie puffed up a whole lot more than the original.  But it was still light, fluffy, and tasty!  Please wait at least 5 minutes before serving this pie, or you will end up with a plate of slop, like I did.

Trust me, it tastes much better than it looks in my picture! 

Ingredients

½ cup small curd cottage cheese (I used 1% milkfat)
¼ cup shredded part-skim mozzarella cheese  
¼ cup shredded Parmesan cheese
½ cup shredded Cheddar cheese
½ cup chopped ham
2 tablespoons minced onion
½ cup Original Bisquick mix
1 cup milk (I used skim)
½ cup egg substitute
Black pepper, to taste

Directions

Heat oven to 400ºF. Spray a 9-inch pie plate with cooking spray. Stir together cheeses, ham and onion; spread in pie plate.

Stir together Bisquick mix, milk, eggs, and pepper until blended. Pour over cheese mixture.

Bake about 35 minutes or until golden brown and knife inserted in center comes out clean.  Let stand 5 minutes before serving.
Yields: 6 servings
