Broccoli Salad

This is such a simple recipe that my mom has been making for years.  I'm not sure where she got the recipe from originally.  I've seen other variations of this recipe before, but never with the celery.  I've had it with shredded Parmesan before, but I don't think the cheese adds anything but calories.

My mom's version is the best, in my opinion!

In order to lighten it up a bit, I use Light Miracle Whip instead of mayonnaise and turkey bacon instead of regular bacon.

Ingredients:

For the Salad:
4 cups broccoli florets                                                
½ cup finely sliced celery    
½ cup onion, diced                                       
¾ cup salted cashews or peanuts                                          
¾ cup raisins
8 slices bacon, crisply fried and crumbled

For the Dressing:
1 cup mayonnaise
½ cup sugar
2 tablespoons cider vinegar

Directions:

Place raisins in small microwave-safe bowl and cover with water.  Microwave for 30 seconds.  Remove from microwave and let stand approximately 5 minutes, so raisins will plump.  Drain.

Combine salad ingredients except bacon in a large bowl.  Stir together dressing ingredients. Approximately 2 hours before serving, add bacon and dressing.  Mix thoroughly.  Refrigerate until ready to serve.

Yields: 1 Salad
