Impossibly Easy Cheesy Pie

I modified a Betty Crocker recipe called Impossibly Easy Triple Cheese Pie to come up with this delicious, fluffy egg and cheese dish.  Yum!  This was so good!  I served it with hashbrowns (breakfast for dinner is a favorite of mine). 
Ingredients

½ cup small curd cottage cheese (I used 1% milkfat)
¼ cup shredded part-skim mozzarella cheese  
¼ cup shredded Parmesan cheese
½ cup shredded Cheddar cheese (I used Colby Jack)
½ cup chopped green bell pepper
½ cup Original Bisquick mix
1 cup milk (I used skim)
½ cup egg substitute
Black pepper, to taste

Directions

Heat oven to 400ºF. Spray a 9-inch pie plate with cooking spray. Stir together cheeses and bell pepper; spread in pie plate.

Stir Bisquick mix, milk, eggs, and pepper until blended. Pour into cheese mixture.

Bake about 35 minutes or until golden brown and knife inserted in center comes out clean.  Let stand 5 minutes before serving.

Yields: 6 servings
