BBQ Chicken Pizza

This is a quick and easy pizza to throw together when you are craving something different from your typical pizza.  I cheated this time and bought a pre-cooked rotisserie chicken from the grocery store; usually I use poached chicken breast.  I'm sure grilled would work, too.

I came up with this recipe myself, and when that happens, I never end up having exact measurements.  So, the following ingredient measurements are approximate.

You can substitute your favorite pizza crust recipe or premade dough for the premade crust I use.  Just follow the directions for your cooking your crust, top with toppings, and bake until toppings are warm and cheese is melted.

Ingredients:

(1) Whole-wheat Boboli pizza crust
Approx. 1/3 cup BBQ sauce (I prefer Open Pit
     Thick & Tangy)
Additional BBQ sauce
1 1/2 to 2 cups cooked cubed or shredded chicken 
(1) small yellow onion, sliced and cooked (I steamed mine,
     sauteed would work too)
1 cup shredded cheddar or Colby-Jack cheese

Directions:

Preheat oven to 450 degrees.  Spread 1/3 cup (more or less to your taste) BBQ sauce over pizza crust, not quite all the way to the edge.  Combine additional BBQ sauce (to your taste) with the chicken until chicken is thoroughly coated.  Spread over crust.

Sprinkle onions over chicken layer.  Top with cheese and cook 8-10 minutes.  Let stand a few minutes before slicing the pizza.
