Pierogi Ranchero


A quick and easy dish to throw together when you want something a little different from your pierogies. I'm sure these would be great fried, but I'm trying to keep it healthy!

Ingredients

1 dozen potato & cheese pierogies
1 yellow bell pepper, cut into strips
1 red bell pepper, cut into strips
Approximately ¼ cup light Ranch dressing
1 T. water
Black pepper, to taste

Directions

Preheat oven to 350 degrees.  Boil pierogies according to package instructions.  Meanwhile, steam the bell peppers until they are tender-crisp.

Spray a 9x13-inch glass baking dish with cooking spray.  Place pierogies flat in the dish.  Add peppers.  Drizzle dressing over the pierogies and peppers, then drizzle the water over the contents of the dish.  Season with pepper.  Cover dish with foil and bake for 10 minutes.  

Yields: 2-3 servings
